Lucy’s Story – Chapter 78

"It turns out that not all painting is done bare-pawed. Who knew?"

Me and my dad got our painting clothes on while my mom went to the paint store.   While she was gone we got busy with our strategy.

‘Ok, Lucy, here is the plan.  Whatever your mom wants painted…we paint.  Right?’  ‘I hear ya, Dad!’  ‘If she says paint the floor, we paint the floor.’ ‘I hear ya, Dad!’  If she says paint the ceiling we paint the ceiling.  ‘I hear ya, Dad!’  If she says paint each other, we paint each other.’  ‘I hear yaaaa, what!!??’

‘Lucy Girl, I’m just trying to prepare you for the unexpected.  You know your Mom, she can change her mind in less time then it takes to flip the kitchen light on!’  ‘Yep, I hear ya, Dad!’

The door opens and we hear my mom say, ‘Hey guess what you two?’

And so it begins!

Ho, Ho, Ho…your fresh cut Christmas tree is here and waiting for you to take it home!  Again this year we have Wisconsin grown Fraser/Balsam mix Christmas trees.

We have all sizes of trees for you to choose from.  We even have a good selection of 9 to 10 foot trees for those wonderfully high cathedral ceilings.  Need a heavy duty stand for your tree?  We have a limited supply of steel arm 25” stance tree stands that will hold your tree safely.

We’ll fresh cut the trunk for you and help you load it into or on top of your vehicle.  If you live within 5 miles of our Cottage Grove location we’d be happy to deliver them to your home.  A $10.00 delivery fee would apply for that service.

We could have been here sooner

An elderly couple were killed in an accident and found themselves being given a tour of heaven by Saint Peter.
"Here is your Oceanside Condo; over there are the tennis courts, swimming pool, and two golf courses. If you need any refreshments, just stop by any of the many bars located throughout the area."
"Heck, Gloria," the old man hissed when Saint Peter walked off, "we could have been here ten years ago if you hadn’t heard about all that stupid oat bran, wheat germ, and low-fat diets!"

Our Kitchen

I want to say a big thank you to everyone who has helped out with the recipes this fall and winter.  I had shoulder surgery in October and was out for several weeks.  I’m back, but typing still isn’t the most comfortable thing for me to do. So, like they always do, everyone has chipped in to be sure you have recipes to try.  Judy and Jesse decided it would be fun to do Christmas cookies in December.  We kicked off last week with my recipe for the Red Velvet Cookies.  This week we are sharing two recipes from Diane.  Watch next week’s newsletter for more staff favorites.  Enjoy!!

Mary’s Star Cookies

The Mary’s Star cookies are similar to the chocolate kiss cookies. These are my daughter’s favorite and a must have at Christmas. Enjoy!
  • ½ c margarine or butter
  • ½ c peanut butter
  • ½ c granulated sugar
  • ½ c brown sugar
  • 1 egg
  • 2 Tbsp milk
  • 1 tsp vanilla
  • 1 ¾ c flour
  • Pinch of salt
  • 1 tsp baking soda
  • 1 bag chocolate stars

Preheat oven to 375 degrees.

Combine the first seven ingredients (butter, peanut butter, sugar, brown sugar, egg, milk and vanilla) and mix well.

Blend in dry ingredients (flour, salt and baking soda).

Shape dough into 1-inch balls. Bake on ungreased baking sheet at 375 degrees for 8-10 minutes.

Press a chocolate star into the center of each cookie and bake for 2-3 more minutes.

Cool on wire rack.

Coconut-Almond Crescent Cookies

  • 1 c butter
  • ¼ tsp salt
  • 1 c confectioner’s sugar
  • 1 tsp almond extract
  • 1 c grated coconut
  • 2-1/4 c cake flour
  • ¾ c blanched almonds
  • Confectioner’s sugar

Cream butter with salt.  Gradually add sugar, creaming until light and fluffy.  Blend in almond extract and coconut. Add cake flour a little at a time.  Then stir in almonds.

Chill dough (at least 1 hour or overnight).  Form into crescents and place on ungreased baking sheets.  Bake in preheated oven 325 degrees for 18-20 minutes. Cool.  Sprinkle with confectioner’s sugar.  Yields about 4½ dozen.
