This July 4th brings to mind exceptional memories of Carol and I driving across this beautiful country of ours. We have been blessed to spend time in many of the national parks across the country. In fact, our honeymoon was spent at two of our favorite spots: Bryce Canyon National Park in Utah and Carlsbad Caverns in New Mexico. (My favorite thing is their bat flight evening program).
If you are looking for a suggestion for a family adventure: You have to visit the four rainforests of the Olympic National Park in Washington. Because of development, very few temperate rainforests exist outside this park. It will transport you to a whole other world. Afterwards, take Hwy 101 South from Seattle to San Diego. What a drive! You will see amazing views, whales, the Red Woods, sea lions and otters, and so many places to pull off for amazing pictures. Please take your time to create these memories. 
I also suggest that you add a few other destinations to your bucket list: Yellowstone (especially in September or early October) and Glacier National Park in Montana (Going-to-the-Sun Road in early September is just unbelievable). Don’t forget to be alert for bears if you do any hiking. Oh! By the way, do NOT speed. Speed limits are much lower in the national parks for your safety and the wildlife.
You could say we really like the great outdoors. We have visited some of these parks three or more times. We eventually purchased Lifetime Senior Passes at Rocky Mountain National Park in Colorado. This park is a MUST SEE in the Fall, especially the alpine part. We drove up to Pikes Peak before they had the guard rails. Talk about exciting!
I challenge you to not make plans or reservations. Just see where the roads and sites take you. If you travel in September, you can often call around 3 PM and find openings in motels along the way– this way you have no set schedule and you are just along for the ride and pure enjoyment. 
I encourage you to get outdoors and have an exceptional 4th of July with your family!

Lemon Brownies
Lemon Brownies are my new favorite dessert. Topped with a delicious lemon glaze, they are just the right mix of fresh lemon and sweetness.
Brownie Ingredients:
  • 1 cup unsalted butter softened
  • 1 1/2 cup sugar
  • 2 tbsp lemon zest
  • 4 large eggs
  • 2 tbsp fresh lemon juice
  • 1 1/2 cup all-purpose flour
  • 1 tsp baking powder
Lemon Glaze Ingredients:
  • 1 1/2 cup powdered sugar
  • 3 tbsp fresh lemon juice
  • 4 tbsp lemon zest
