I thank the Lord every day for our daughter, Jennifer. The stories I am sharing are not meant to be boastful or to embarrass her in any way. I feel that when I share these memories with all of you, you can easily see how blessed I have been in my life. You’ll be surprised to learn that throughout my life, Jennifer continued to show up exactly when I needed her.
One last example goes back to when l was working full-time at Wisconsin Cheesemen and coming home to do all of the field work in the evening. I had been out plowing well into the night. Before pulling into the barn, I parked and attempted to remove the plow with the tractor running. (With my luck in the previous newsletter stories, I’m sure you can anticipate what is coming next) I somehow found myself trapped in the plow!
As some of you may know, a tractor engine has a distinctive rumble sound that it makes when running. Now, picture trying to whistle loud enough over the sound of it. And don’t forget, this is later at night where I am only competing with the crickets, the frog, and the noise of the tractor. I kept on whistling with all my might for some time.
By the grace of God, Jennifer heard me and came to my aid. Come to think of it, all of these times Jennifer shows up at just the right moment have always been by the grace of God. Isn’t that the funny part of life? It took me longer to see that, but Jennifer has been in tune with those calls as long as I can remember.
I should probably also say that my little girl is full-grown now. Many of you know that Jennifer lives near Seattle with her husband and three children. For a number of years, she followed in my footsteps working in a greenhouse and stopped after her third child was born. In it’s place, she has taken on the additional challenge of overseeing the garden at the kid’s school. In fact, I think she loves plants even more than her Dad. I am so happy to have passed on that love to her.
However, as every Dad with a Daddy’s Girl will attest, I wish I could be there with her right now. You see, she is laying in bed with a broken foot. As she was cleaning out the garage a week or so ago, a heavy table dropped on her foot. She has had to have surgery to repair things. It would give me great comfort if you could please pray for her speedy recovery.
And finally, I hope to see everyone out at the greenhouse this weekend enjoying all of the blooms and birds and butterflies.

Cauliflower Rice Risotto
In addition to being chock-full of nutrients, cauliflower rice risotto is also much quicker to make than traditional risotto, coming together in just about 15 minutes. That means it works great as a quick and easy weeknight meal when you pair it with your favorite protein.
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 small shallot, minced
  • 4 cups cauliflower rice (fresh or frozen)
  • 1/2 pound asparagus, cut into 1-inch pieces
  • 1 cup peas (fresh or frozen)
  • salt and pepper (as needed)
  • 3 tablespoons dry white wine
  • 3 tablespoons Cream Cheese
  • 2 tablespoons Parmesan Cheese
  • 4 Tablespoons chopped fresh chives
  • 2 Tablespoons chopped fresh parsley
Tip from Michele:
I adjusted the original recipe using regular cheeses, but you can easily revert back to the vegan and lactose-free options in the directions link.
