With all the rain and spring thaw over the last few days, we are thankful that most of Dane County has remained below flood level. However, we know many others have not been as lucky. Carol and I certainly feel compassion for these individuals as we had felt the wrath of the 500-year floods back in 1992. 
All this flooding brings to mind one of our family camping trips in the late 70’s. When I think back to the early years of our berry and vegetable business, winter camping with Carol and our daughter Jennifer was the bee’s knees for me. I don’t think I am alone when I say that, as many of you have fond memories spending time in the great outdoors as kids. 
One of our first trips was to a KOA campground in Florida. I had a Blue VW Beetle. How we got all the camping gear and ourselves in the car, I will never know! We had a nice 9 by 9 foot tent. We all slept in our sleeping bags on the hard ground: Carol and I in a double sleeping bag and our daughter in her own. 
Now, afternoon thunderstorms are pretty much the norm in Florida. However, that usually stops around October. One night after we had gone to bed, it started to pour El Niño style rain and showed no signs of letting up. We tried as best we could to empty the pockets of water that had gathered over our heads, then declared it an exercise in futility.
Water began to seep into the tent. We scrambled out of the tent and crawled into the car until dawn. Just picture the three drowned rats in the morning! Everything was soaking wet in the tent. In fact, the tent was sitting in four inches of water and we were still wet from head to toe. Needless to say, from that point on, we always picked a high spot when we tent camped!
We hope to get the chance to see you in person at our Celebrate Spring Open House this Saturday, March 30th and Sunday, March 31st at our Cottage Grove location.  In addition to your favorites, we are eager for you to see all the new and exciting plants we have for 2019. And that’s not all! This season’s medley of unique and eye catching pottery and fun garden art will surely impress you.

Spinach, Walnut & Strawberry Salad
This classic salad goes with just about anything you’re serving. The juicy berries add a pop of color to the greens, while the crunchy walnuts and salty cheese should satisfy every craving!
  • 2 1/2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons strawberry preserves
  • 1/4 teaspoon sea salt
  • 1 1/2 cups sliced strawberries
  • 1 5-oz. package baby spinach
  • 1/2 cup chopped & toasted walnuts
  • 1/3 cup crumbled feta cheese
  • Whisk together lemon juice, olive oil, preserves and salt in a large bowl.
  • Add strawberries and toss lightly. Place spinach in bowl and toss again to coat with dressing. Top with walnuts and cheese and serve immediately.
